Everything Bagel
Smoked Salmon and Cream Cheese

Yield: 12 bagels
INGREDIENTS:
Everything Spice:
1 cup sesame seeds
1 tablespoon sea salt
1 tablespoon dried minced garlic
1 tablespoon dried minced onion
1 tablespoon poppy seeds
Everything Bagels:
1 kilogram high-gluten flour
15 grams salt
50 grams malt powder
4 grams yeast
50 grams honey
To Assemble and Serve:
Cream cheese
Smoked salmon
METHOD:
For the Everything Spice:
In a bowl, combine all ingredients.
For the Everything Bagels:
In the bowl of a KitchenAid Commercial stand mixer fitted with a paddle, mix to combine flour, salt, malt powder, and yeast. Add honey and 500 milliliters water, mixing 10 minutes until dough is smooth and elastic. Divide dough into 12 equal balls. Form bagels, place on a sheet tray, and refrigerate overnight. The next day, heat Marra Forni oven to 450°F and bring a larger pot of water with esters to a boil. Boil bagels 1 minute on each side. Remove bagels from pot and coat with Everything Spice. Place on sheet trays and bake 15 minutes.
To Assemble and Serve:
Slice Everything Bagels and schmear each side with cream cheese. Add smoked salmon and close sandwich.
