INGREDIENTS
Orange Blossom Honey Syrup:
100 grams orange blossom honey
To Assemble and Serve:
Yield: 1 cocktail
½ ounce lemon juice
½ ounce Chinola passion fruit liqueur
¼ ounce Lazzaroni amaretto
1 ounce Aberfeldy 12-year single malt Scotch whisky
½ ounce Bank Note blended Scotch whisky
1 dash Peychaud’s bitters
1 drop fennel seed oil
Salt
Dried fennel flowers
METHOD
For the Orange Blossom Honey Syrup:
In a mixing bowl, combine honey and 50 grams filtered water. Mix until honey is fully dissolved. Bottle and refrigerate.
To Assemble and Serve:
In a Boston shaker with ice, add lemon juice, liqueur, amaretto, whisky, bitters, fennel seed oil, a pinch of salt, and ½ ounce Orange Blossom Honey Syrup. Shake, then strain into a honey bear-shaped glass. Top with crushed ice. Garnish with fennel flowers.
