“This is a drink with kind of a snotty name: ‘And Fire Green as Grass.’ It’s from the Dylan Thomas poem, Fern Hill. We print the last two lines of Fern Hill on every one of our menus. It’s all there—rhythm, melody, big ideas. It’s the closest thing we have to a mission statement around here. This is, after eight menus, the cocktail that I am most proud of. For better or worse, this is the closest I’ve come to that white whale.” – Will Hollingsworth

INGREDIENTS

1½ ounces Bombay Sapphire East gin
¾ ounce green Chartreuse
¼ ounce St. Elizabeth Allspice Dram
¼ ounce Smith & Cross navy strength rum

METHOD

In a mixing glass filled with ice, combine gin, Chartreuse, and allspice dram. Stir to chill and strain into a coup. Float the rum on top.
