London Dry Gin, Rose Liqueur, Orgeat, Egg White, Lemon, Cardamom Bitters

INGREDIENTS

Orgeat:
Yield: 1 gallon
2 quarts unsweetened almond milk
2 quarts evaporated cane sugar
1½ ounces Lazzaroni Amaretto
¼ ounce orange blossom water
1 ounce pure grain alcohol (optional, for additional shelf life)

To Assemble and Serve:
Yield: 1 cocktail
1½ ounces London dry gin
¼ ounce Combier liqueur de rose
¾ ounce egg white
9 drops Scrappy's cardamom bitters
1 lemon, for juice and zest

METHOD

For the Orgeat:
In a nonreactive container, combine all ingredients, stirring until sugar dissolves. Cover and refrigerate.

To Assemble and Serve:
To a shaker, add gin, Combier, egg white, bitters, 1 ounce lemon juice, and ¾ Orgeat. Dry shake, add ice, and then wet shake. Strain into a chilled coupe. Grate lemon zest over top.
