Clarified Banana Rum, Banana Syrup, Lime 2.0

INGREDIENTS

Clarified Banana Rum:
(Yield: 1 liter)
150 grams ripe bananas
1 liter Caribbean rum
2 grams Pectinex

Banana Syrup:
(Yield: 1 liter)
150 grams ripe bananas
1 liter simple syrup
2 grams Pectinex

Lime 2.0:
94 grams filtered water
4 grams citric acid
2 grams malic acid
0.04 grams succinic acid   

METHOD

For the Clarified Banana Rum:
In a Vitamix blender, combine bananas and rum. Add Pectinex, blending until mixtures reaches 100°F. Transfer to a centrifugal mixer and mix at 4,000g for 20 minutes. Pour off and reserve clarified rum. Discard banana remnants.

For the Banana Syrup:
Follow same method as for Clarified Banana Rum.

For the Lime 2.0:
In a nonreactive container, combine all ingredients. 

To Assemble and Serve:
To a mixing glass with ice, add 2 ounces Clarified Banana Rum, 1¼ ounces Clarified Banana Syrup, and ¾ ounce Lime 2.0; stir to chill. Strain into a double old-fashioned glass over a 2-inch by 2-inch ice cube.
