Sea Lettuce-Infused Gin, Sea Lettuce Syrup, Lime Cordial

INGREDIENTS
Sea Lettuce-Infused Gin:
1 liter gin
170 grams sea lettuce
Sea Lettuce Syrup:
5 grams sea lettuce
1 ounce 1:1 simple syrup
Lime Cordial:
5 limes, zested and juiced
16 ounces 1:1 simple syrup
5 grams citric acid
To Assemble and Serve:
½ ounce lime juice
2 drops saline
Rice-puffed nori chip
METHOD
For the Sea Lettuce-Infused Gin:
In a nonreactive container, combine all ingredients. Let steep 48 hours. Strain, bottle, and reserve.
For the Sea Lettuce Syrup:
In a nonreactive container, combine all ingredients. Let steep 24 hours. Strain, bottle, and reserve.
For the Lime Cordial:
In a large nonreactive container, combine all ingredients. Let steep 24 hours. Strain, bottle, and reserve.
To Assemble and Serve:
In a shaker with ice, add lime, saline, 2 ounces Sea Lettuce-Infused Gin, ½ ounce Sea Lettuce-Infused Simple Syrup, and ½ ounce Lime Cordial. Shake, then strain into a coupe. Garnish with nori chip.
