Grey Goose Vodka, Cold Brew, Plantain Cordial

INGREDIENTS

Plantain Cordial:
Yield: 40 servings
One 750-milliliter bottle overproof rum
12 to 15 baked, ripe Goya plantains, room temperature
Rich simple syrup

To Assemble and Serve:
Yield: 1 cocktail
2 ounces Grey Goose vodka
1 ounce Smalltime Roasters Vulcán de Fuego cold brew coffee
3 coffee beans

METHOD

For the Plantain Cordial:
Heat the bath of an immersion circulator to 150°F. In a vacuum bag, combine rum and plantains and seal. Cook sous vide 1½ hours. Strain infused rum through a cheesecloth-lined chinois. Measure the rum and combine with equal parts rich simple syrup. 

To Assemble and Serve:
In a cocktail shaker filled with ice, combine vodka, 1 ounce Plantain Cordial, and coffee. Shake and strain into a coupe and float coffee beans on top.
